- 2 whole skinless chicken breasts
- 1/4 c. sliced onions
- 2 Tbsp. chopped celery
- 2 Tbsp. chopped green pepper
- 1/2 c. tomato sauce
- 1/4 c. water
- dash of hot pepper sauce
- 2 tsp. Worcestershire sauce
- 1 Tbsp. mustard
- 1 tsp. vinegar
- sweetener equivalent to 5 tsp. firmly packed brown sugar
Method
- In a large skillet, combine all ingredients except the chicken.
- Cover and cook over medium-low heat until vegetables are tender, about 15 minutes.
- Uncover and cook 15 minutes longer. Brush mixture over chicken, then broil chicken, bone side up, on a rack, under the broiler for 8 minutes.
- Brush frequently with sauce.
- Turn chicken over and continue broiling (and brushing sauce) for another 8 minutes or until chicken is tender.
- When done, pour any remaining sauce over chicken.
- Serve hot or cold.
