Ingredients

  • 3 pounds cooked and quartered baby red potatoes
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1/2 cup thinly sliced green onions
  • 1/3 cup chopped fresh cilantro
  • 2 tablespoons sauce from canned chipotle peppers in adobo sauce
  • 3/4 teaspoon lime zest
  • 2 tablespoons lime juice
  • Salt and freshly ground pepper to taste

Method

  • Stir together potatoes, mayonnaise, sour cream, green onions, cilantro, adobo sauce, lime zest, and lime juice. Season with salt and freshly ground pepper to taste just before serving.
