Ingredients

  • 1 pound grnd beef
  • 1 (15 ounce.) can pinto beans, liquid removed
  • 1 (10 ounce.) can enchilada sauce
  • 1 (8 ounce.) can tomato sauce
  • 1 c. shredded sharp cheese (4 ounce.)
  • 1 sm. onion, diced
  • 1 (6 ounce.) pkg. corn chips
  • 1 c. lowfat sour cream
  • 1/2 c. shredded sharp cheese (2 ounce.)

Method

  • Brown grnd beef in skillet and drain.
  • Stir in beans, enchilada sauce, tomato sauce, onion and 1 c. shredded sharp cheese (4 ounce.
  • ).
  • Set aside 1 c. corn chips; crush remaining chips.
  • Mix chips and meat mix.
  • Put in 1 1/2 qt casserole dish.
  • Cover and bake for 30 min at 375 degrees.
  • Remove from oven and spoon lowfat sour cream atop casserole; sprinkle with the 1/2 c. shredded cheese.
  • Sprinkle remaining 1 c. of corn chips around edges and bake, uncovered, 2 to 3 min more.
  • Makes 6 servings.
