Ingredients
- FOR THE CUPCAKES:
- 18-1/4 ounces, weight Box Of Devil's Food Cake Mix
- 3 Eggs
- 1 cup Water
- 1/3 cups Oil
- 52 bars Frozen Mini Snickers Bars, Unwrapped
- FOR THE ICING:
- 1 stick Unsalted Butter, At Room Temperature
- 4 ounces, weight Cream Cheese
- 1 cup Powdered Sugar
- 1/4 cups Caramel Topping
- 1 teaspoon Vanilla
- 3/4 cups Milk
Method
- For the cupcakes:
- 1. Preheat the oven to 350°F. Line two 12 cup muffin tins with paper liners.
- 2. In a large bowl mix cake mix, eggs, water and oil together.
- 3. Divide mix into prepared muffin tins.
- 4. Place two frozen Snickers bars into the center of each cupcake.
- 5. Bake for 20-22 minutes, or until an inserted toothpick comes out clean. Try not to insert the toothpick into the Snickers bar or you won't get a true read.
- 6. Remove the pans from the oven and allow cupcakes to cool completely.
- For the icing:
- 1. In a medium sized bowl cream together butter and cream cheese.
- 2. Slowly add powdered sugar, mixing as you go.
- 3. Add caramel and vanilla and mix until combined.
- 4. Add milk until you reach the right consistency for piping or spreading.
- 5. Taste. If you would like a more intense caramel flavoring add more.
- 6. Pipe or spread frosting onto the top of the cooled cupcakes.
- 7. Enjoy! These may be garnished with more Snickers and caramel.
- A couple of notes:
- - I added two Snickers because the first time I made these with one,
- I did not get a strong Snickers flavor. I wanted the flavor to be very prominent so I added another.
- - Also we in our house do not like an overly sweet frosting so I added the cream cheese. This can be omitted if desired. If so just increase your butter and powdered sugar as desired.
