Ingredients

  • 3 cups whole wheat flour
  • 1/2 cup sugar
  • 2/3 cup dry milk
  • 1/4 cup soy flour
  • 2-1/2 tbsp. wheat germ
  • 2 tbsp. salt
  • 3 pkg. dry yeast
  • 4-1/2 cup water
  • 1/2 cup oil
  • 2 eggs
  • 5-1/2 cup unbleached white flour

Method

  • Combine dry ingredients (except white flour) in a large mixing bowl.
  • Mix together water and oil and warm to 120F-130F in microwave.
  • Beat eggs into water/oil.
  • Add liquid ingredients into mixing bowl; blend at low speed until moistened.
  • Add unbleached white flour and stir in by hand.
  • Cover and let rise until doubled.
  • Stir down and pour into 2 large bread pans.
  • Bake immediately at 375F for 35-40 minutes.
  • Remove from pan.
  • Should sound deeply hollow when tappend on bottom.
  • Cool on rack.
