Ingredients
- 1 Tablespoon olive oil
- 12 medium shrimp, peeled and deveined
- 2 roasted red peppers, chopped into 1/2 inch pieces
- 1/4-1/2 teaspoon hot smoked paprika
- 1 clove garlic, chopped
- 1/4 cup white wine
Method
- Warm olive oil over medium-high heat in a skillet. Add shrimp and cook on one side until bright pink and curled, about 3 minutes.
- Add peppers, paprika and garlic. Toss together for 2 minutes, until shrimp is almost done.
- Add wine and boil until reduced by half.
