Ingredients

  • 1 Tablespoon olive oil
  • 12 medium shrimp, peeled and deveined
  • 2 roasted red peppers, chopped into 1/2 inch pieces
  • 1/4-1/2 teaspoon hot smoked paprika
  • 1 clove garlic, chopped
  • 1/4 cup white wine

Method

  • Warm olive oil over medium-high heat in a skillet. Add shrimp and cook on one side until bright pink and curled, about 3 minutes.
  • Add peppers, paprika and garlic. Toss together for 2 minutes, until shrimp is almost done.
  • Add wine and boil until reduced by half.
