Ingredients
- 1 package smoked sausage sliced
- 1/4 cup olive oil
- 2 cloves garlic crushed
- 1 red bell pepper large, sliced thin
- 1 yellow onion large, sliced thin
- 2 tomatoes large, diced
- 1 package frozen broccoli florets thawed
- 1/2 cup chicken broth
- 2 cups rice prepared
Method
- Heat olive oil and garlic in a large skillet. Stir in sausage and allow to cook until browned.
- Add peppers, onion, broccoli, chicken broth, and tomatoes to skillet. Allow to simmer for about 10 minutes, or until vegetables are tender.
- Add prepared rice to skillet. Stir to combine. Season with salt & pepper to taste and serve hot.
