Ingredients

  • 1 package smoked sausage sliced
  • 1/4 cup olive oil
  • 2 cloves garlic crushed
  • 1 red bell pepper large, sliced thin
  • 1 yellow onion large, sliced thin
  • 2 tomatoes large, diced
  • 1 package frozen broccoli florets thawed
  • 1/2 cup chicken broth
  • 2 cups rice prepared

Method

  • Heat olive oil and garlic in a large skillet. Stir in sausage and allow to cook until browned.
  • Add peppers, onion, broccoli, chicken broth, and tomatoes to skillet. Allow to simmer for about 10 minutes, or until vegetables are tender.
  • Add prepared rice to skillet. Stir to combine. Season with salt & pepper to taste and serve hot.
