- 1/4 cup fresh lemon juice
- 1 tablespoon water
- 1 tablespoon minced peeled fresh ginger
- 1 tablespoon honey
- 1 teaspoon chopped fresh dill
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 2 tablespoons extra-virgin olive oil
- 8 cups gourmet salad greens
- 8 ounces smoked salmon, sliced and cut into thin strips
- 1 (3.5-ounce) package goat cheese, cut into 4 equal slices
- 1/4 cup very thinly sliced red onion
Method
- Combine first 7 ingredients in a blender; process 30 seconds or until smooth, scraping sides. With blender on, slowly pour oil through food chute; process until thickened.
- Place salad greens on individual plates; top each evenly with salmon, cheese, and onion; drizzle with dressing. Serve immediately.
