Ingredients

  • 1/4 cup fresh lemon juice
  • 1 tablespoon water
  • 1 tablespoon minced peeled fresh ginger
  • 1 tablespoon honey
  • 1 teaspoon chopped fresh dill
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 tablespoons extra-virgin olive oil
  • 8 cups gourmet salad greens
  • 8 ounces smoked salmon, sliced and cut into thin strips
  • 1 (3.5-ounce) package goat cheese, cut into 4 equal slices
  • 1/4 cup very thinly sliced red onion

Method

  • Combine first 7 ingredients in a blender; process 30 seconds or until smooth, scraping sides. With blender on, slowly pour oil through food chute; process until thickened.
  • Place salad greens on individual plates; top each evenly with salmon, cheese, and onion; drizzle with dressing. Serve immediately.
