Ingredients

  • 12.5 oz smoked chicken breast fillets, thinly sliced
  • 3 stalks celery, trimmed, thinly sliced
  • 3 None small tomatoes, quartered, seeded
  • 3.5 oz baby spinach
  • 4 None hard-boiled eggs, quartered
  • 2 None spring onions, thinly sliced
  • 1/2 cup slivered almonds, toasted
  • 2 tsp cumin seeds, toasted
  • 2/3 cup mayonnaise
  • 1/4 cup lemon juice

Method

  • Combine chicken, celery, tomatoes, spinach, eggs, onions and almonds in a large bowl and toss gently to combine.
  • Crush cumin seeds finely using a mortar and pestle. Combine with mayonnaise and lemon juice then drizzle over salad. Serve.
