Ingredients
- 6-8 baby potatoes (new, purple and reds)
- 4 Tblspn butter
- 2-3 Tblspn chives
Method
- Boil the potatoes in salted water until just fork tender, drain the water and remove the potatoes.
- Put the butter into the pot and melt it down, once butter is melted add the potatoes back into the pot.
- Using a laddel or a potato masher gently press down on the potatoes until they split open.
- Stir gently to coat them with the butter then add the chives, mixing once again to coat them.
- Serve with your favorite meal.
