Ingredients

  • 4 medium sweet potatoes
  • 1 c. brown or white sugar
  • 1/3 tsp. nutmeg
  • 1/3 tsp. cinnamon
  • 1 tsp. lemon
  • 1/2 c. butter
  • 1/2 c. milk

Method

  • Peel and slice potatoes.
  • Place in a pot.
  • Cover with hot water and bring to boil; simmer for 5 minutes.
  • Drain; place in a deep dish lined with pastry.
  • Sprinkle each layer of potatoes with sugar and spices.
  • Dot with butter.
  • Pour milk over potatoes.
  • Top with strips of pastry.
  • Bake at 450° for 10 minutes.
  • Reduce heat to 325° and bake for 45 minutes more.
