Ingredients

  • 4 medium potatoes
  • 1 tsp. salt
  • 3 Tbsp. melted butter
  • 3 Tbsp. chopped chives or mixed herbs
  • 4 Tbsp. grated Cheddar cheese
  • 2 Tbsp. Parmesan cheese

Method

  • Clean and peel potatoes.
  • Slice potatoes into thin slices, but not all the way through.
  • Put potatoes in a baking dish.
  • Sprinkle with salt and drizzle with butter.
  • Then sprinkle with chives. Bake at 425° for about 50 minutes.
  • Remove from oven and sprinkle with cheeses.
  • Bake 10 to 15 minutes longer, until lightly browned, cheeses are melted and potatoes are soft inside.
