Ingredients

  • 4 medium potatoes, scrubbed
  • 1 tsp. salt
  • 2 tsp. dried herbs or any spice (sage, chives, etc.)
  • 4 Tbsp. grated Cheddar cheese
  • 3 Tbsp. butter
  • 1 1/2 tsp. Parmesan cheese

Method

  • Carefully partially slice potatoes; lay a spoon to side to prevent cutting all the way through. Place in baking dish. Gently separate slices. Salt and pepper. Use herbs here. Bake at 425° for 45 to 50 minutes. Sprinkle with both cheeses and bake 10 minutes more. Should be lightly browned and cheese melted.
