Ingredients

  • 1 egg scrambled with 1 Egg White
  • 1/2 tomato A Medium Sized, Chopped
  • 1 tablespoon red onion Chopped
  • 1/4 red bell pepper or Green, Chopped
  • 2 slices turkey bacon Extra Lean, Like Jeenie O
  • 1 slice 2% American cheese

Method

  • Heat a small Saute Pan to medium heat and spray with cooking spray.
  • Add Tomato, Onion, and Bell Pepper and Saute 3 minutes.
  • Set the Vegetable aside.
  • Cook the 2 Slices of Turkey Bacon in the microwave oven for 2 minutes.
  • Set aside.
  • Wipe out the saute pan with paper towel and reheat to medium heat.
  • Spray with cooking spray.
  • Add eggs and swirl the eggs on the bottom of the pan until it is evenly spread out on the bottom of the pan.
  • Cover and cook on medium heat 3 minutes.
  • Add cheese, vegetables, and bacon.
  • Close the omelet.
  • Let stand in covered pan for one minute with heat turned off.
  • Carefully move to a plate and serve.
  • Season with your favorite no salt seasoning mix or salt and pepper.
