Ingredients

  • 2 tablespoons olive oil
  • 8 small red potatoes, quartered
  • 1 (14 ounce) package Hillshire Farm Smoked Sausage, cut into 1/2-inch slices
  • 1 cup chopped sweet onion
  • 1 cup sliced zucchini
  • 1 cup sliced yellow squash
  • 1/4 cup chopped jalapeno chile
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon paprika
  • 1 teaspoon dried parsley
  • 1/2 teaspoon salt

Method

  • Heat oil in a large nonstick skillet.
  • Add potatoes; cook and stir to coat potatoes with oil.
  • Cover and cook for 15 minutes, turning occasionally.
  • Add sausage, onion, zucchini, yellow squash, and green chili.
  • Season with onion powder, paprika, parsley, and salt.
  • Cover and cook until veggies are beginning to soften or to taste, about 10 minutes.
