- 2 tablespoons olive oil
- 8 small red potatoes, quartered
- 1 (14 ounce) package Hillshire Farm Smoked Sausage, cut into 1/2-inch slices
- 1 cup chopped sweet onion
- 1 cup sliced zucchini
- 1 cup sliced yellow squash
- 1/4 cup chopped jalapeno chile
- 1/2 teaspoon onion powder
- 1/2 teaspoon paprika
- 1 teaspoon dried parsley
- 1/2 teaspoon salt
Method
- Heat oil in a large nonstick skillet.
- Add potatoes; cook and stir to coat potatoes with oil.
- Cover and cook for 15 minutes, turning occasionally.
- Add sausage, onion, zucchini, yellow squash, and green chili.
- Season with onion powder, paprika, parsley, and salt.
- Cover and cook until veggies are beginning to soften or to taste, about 10 minutes.
