- 1 tablespoon extra-virgin olive oil
- 1 tablespoon butter
- 14 ounces smoked sausage or kielbasa, diced
- 1/2 white onion medium, diced
- 1 cup white rice
- 2 cups low sodium chicken broth
- 14 ounces pinto beans rinsed and drained
- 1/2 teaspoon italian seasoning dried
- 1/2 teaspoon garlic powder
- 1 tablespoon dried parsley
- salt
Method
- Heat the oil and butter over medium-high in a large rimmed skillet (make sure your skillet has a lid!). Add the sausage and onion, and saute until onions become soft and translucent.
- tir in the rice and cook for an additional minutes while frequently stirring. Add the chicken broth, beans, Italian seasoning, garlic powder and parsley. Bring to a boil. Cover, reduce heat to medium-low, and simmer for 20 minutes or until rice is tender. Make sure to stir the mixture to o prevent sticking or burning. Remove from the heat and season with salt and pepper if desired. Serve immediately.
