Ingredients

  • 1 (15 oz.) box Raisin Bran
  • 1 c. melted shortening or oil
  • 3 c. sugar
  • 4 beaten eggs
  • 1 qt. buttermilk
  • 5 c. flour
  • 5 tsp. baking soda
  • 2 tsp. salt

Method

  • Mix Raisin Bran, sugar, flour, soda and salt in large bowl. Add eggs, shortening and buttermilk.
  • Mix well.
  • Store in covered container in refrigerator to use as needed.
  • Keeps up to 6 weeks. Fill muffin tins that have been coated with shortening 2/3 full. Bake in preheated oven at 375° to 400° for 15 to 20 minutes. Makes 5 dozen muffins depending on size of muffin tin.
