Ingredients

  • 2 c. diced potatoes
  • 3 Tbsp. uncooked rice
  • 3/4 lb. ground beef
  • 1 medium green pepper
  • 1 medium onion
  • 2 carrots, chopped
  • 1 (No. 3) can whole tomatoes
  • 1 tsp. salt
  • 1/2 tsp. sugar

Method

  • Place a thick layer of raw potatoes in a casserole dish which has been buttered.
  • Sprinkle rice over potatoes.
  • Cover rice with ground beef.
  • Add layer of chopped carrots, then green peppers, onions, salt and sugar.
  • Add tomatoes which you have chopped up with the juice.
  • Cover tightly and cook at 350° for 2 1/2 hours.
