Ingredients
- 2 c. diced potatoes
- 3 Tbsp. uncooked rice
- 3/4 lb. ground beef
- 1 medium green pepper
- 1 medium onion
- 2 carrots, chopped
- 1 (No. 3) can whole tomatoes
- 1 tsp. salt
- 1/2 tsp. sugar
Method
- Place a thick layer of raw potatoes in a casserole dish which has been buttered.
- Sprinkle rice over potatoes.
- Cover rice with ground beef.
- Add layer of chopped carrots, then green peppers, onions, salt and sugar.
- Add tomatoes which you have chopped up with the juice.
- Cover tightly and cook at 350° for 2 1/2 hours.
