Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 3 garlic cloves, minced
  • 2 tablespoons taco seasoning
  • 3 cups cooked chicken, chopped
  • 1 (10 ounce) candiced tomatoes and green chilies (I use Ro Tel)
  • 6 flour tortillas
  • 1 cup cheddar cheese, shredded
  • extra oil (for frying)

Method

  • Heat about 2 inches of oil in a frying pan.
  • In another frying pan, heat 1 tbsp of oil in frying pan.
  • Add onion and cook until soft.
  • Add garlic and taco seasoning and cook for about 30 seconds more.
  • Add the chicken and heat thoroughly.
  • Then add tomatoes/chiles and cook until heated through, about 5 minutes.
  • Place 1/6 of the mixture into the middle of each tortilla and then top with cheese.
  • Roll up bringing in sides first and then rolling front to back.
  • Place in oil, seam side down and hold there for a few moments to keep from unrolling or "seal" with a toothpick.
  • Cook until nicely browned and tortilla is crisp.
  • Serve with salsa, guacamole and sour cream!
