Ingredients

  • 1/3 cup melted coconut oil or unsalted butter
  • 1/3 cup honey
  • 4 None large eggs
  • 1/2 cup lemon juice
  • -1 None Silver Dollar Buckwheat Pancakes
  • 1 cup buckwheat flour
  • 1/2 cup rice flour
  • 1/4 cup coconut sugar
  • 2/3 cup coconut milk (or milk)
  • 2 None large eggs
  • 1 tsp baking soda
  • 1/2 tsp sea salt

Method

  • For the lemon curd, gently heat coconut oil and honey together in a small saucepan until melted. Transfer to a medium bowl. Once cool, whisk in eggs and lemon juice. Place over a saucepan of simmering water (don't let bottom of bowl touch the water). Whisk continuously for 2-3 mins, or until thick. Remove from heat and let cool.
  • To make the silver dollar pancakes, combine all ingredients in a blender and blend until smooth.
  • Lightly grease a large frying pan with butter or coconut oil and place over low-medium heat. Drop tablespoonfuls of batter into pan and cook until bubbles start to appear on surface. Flip over and cook for 1-2 mins, until golden brown underneath. Serve with lemon curd.
