- 3 cup water
- 3 cup best potato mash, ( same size cup used as for water)
- 2 tbsp sunflower oil
- 6 medium tomatoes
- 1 onion finely sliced
- 1 large clove of garlic crushed or very finely chopped
- 1 good pinch each of salt or salt substitute, black pepper freshly cracked, thyme and oregano
- 10 olives black or green
- 200 grams sheep or goats cheese
- 5 tbsp grated parmesan cheese
- 1 large egg
- 1 tbsp cornstarch
- 4 basil leaves very finely torn. Or use a little dried basil.
- 2 tbsp olive oil
Method
- I use a homemade potato mash and celeriac or garlic mash, that is not runny or sloppy, but if you are in a rush boil three cups of water, then put into a bowl add the powder mash, make sure it is of good quality, stir and leave to stand for a minute, The egg and cornstarch needs to be added whether you use homemade mash or powder mash, mix well .
- Grease a baking tray with the oil
- Add your potato mash to the tray making a pizza shaped base, about 30 cm big.
- Bake at 225C for about 20 minutes.
- Wash the tomatoes ,slice thinly, lay onto the potato pizza
- Saute one thinly sliced onion and one crushed or very finely chopped clove of garlic .
- Drain fat from it and the onion and garlic mix over the tomatoes on pizza
- Season well with thyme, oregano,salt or salt substitute and pepper.
- Cut the sheep's or goats cheese into small cubes sprinkle over the pizza
- Add the olives and sprinkle with parmesan
- Drizzle with olive oil
- Bake for about 25 minutes until slightly browned on 225C.
- Sprinkle with a little fresh basil.
- This makes 12 slices.
- You can of course use other toppings too.
