Ingredients

  • 1 1/2 lb. New potatoes
  • 1/2 c. water
  • 4 tsp. olive oil
  • 1 tbsp. chopped fresh oregano
  • 1/4 tsp. freshly grated lemon peel
  • 1/2 tsp. salt
  • 1/2 tsp. Freshly ground pepper
  • 4 plum tomatoes
  • 1 tsp. minced garlic
  • 1 lb. medium-size shrimp
  • 2 oz. feta cheese

Method

  • Put potatoes and water in a 13x9-inch glass baking dish.
  • To cook potatoes in microwave: Cover with vented plastic wrap and microwave on high 6 minutes.
  • Stir, cover and microwave 6 minutes longer or until potatoes are just tender.
  • In conventional oven: Cover with foil and bake in a 350F oven 40 minutes or until just tender.
  • Drain potatoes, then return to baking dish.
  • Add 2 teaspoons of the oil, the oregano, lemon peel and 1/4 teaspoon each of the salt and pepper and stir to mix.
  • Heat oven to 400F.
  • Toss tomatoes, garlic, remaining 2 teaspoons oil and remaining 1/4 teaspoon each salt and pepper in a medium-size bowl.
  • Spoon over potato mixture, then arrange shrimp on top.
  • Bake 15 minutes.
  • Remove from oven and sprinkle with feta.
