Ingredients
- 2 None avocados, chopped coarsely
- 2 tbsp lime juice
- 2 tbsp water
- 2 None mangoes, chopped coarsely
- 800 g cooked medium king prawns
- 80 g mesclun leaves
Method
- Blend or process avocado, lime juice and the water until smooth; season to taste. Transfer to medium bowl.
- Blend or process mango until smooth.
- Shell and devein prawns, leaving tails intact. Divide purees among serving plates; top with mesclun and prawns.
