Ingredients
- 1 3/4 pounds large shrimp, peeled and deveined
- 2 tablespoons fresh lime juice
- 1/2 teaspoon ground cumin
- 1/4 teaspoon ground ginger
- 2 garlic cloves, minced
- 1 tablespoon olive oil
- 1/4 cup chopped fresh cilantro
- 1 teaspoon grated lime rind
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
Method
- Combine first 5 ingredients in a large bowl; toss well. Heat oil in a large nonstick skillet over medium-high heat. Add shrimp mixture, and saute 4 minutes or until shrimp are done. Remove from heat; stir in cilantro and remaining ingredients.
