Ingredients

  • 1 3/4 pounds large shrimp, peeled and deveined
  • 2 tablespoons fresh lime juice
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon ground ginger
  • 2 garlic cloves, minced
  • 1 tablespoon olive oil
  • 1/4 cup chopped fresh cilantro
  • 1 teaspoon grated lime rind
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Method

  • Combine first 5 ingredients in a large bowl; toss well. Heat oil in a large nonstick skillet over medium-high heat. Add shrimp mixture, and saute 4 minutes or until shrimp are done. Remove from heat; stir in cilantro and remaining ingredients.
