Ingredients

  • 2 packages shrimp flavored udon
  • 1/2 cup fish cake, thinly sliced flat
  • 1/2 tbsp soy sauce
  • 2 eggs, poached
  • scallion, finely cut
  • 1 tsp minced garlic (or garlic powder)
  • gim (dried seaweed), cut into strips (optional)

Method

  • 1. Bring large pot of water to a boil and add the sauce packets, soy sauce, minced garlic, and shrimp. Boil for a few minutes before adding the udon noodles.
  • 2. Add the udon noodles and fish cakes. Cook for about 5 minutes or until the noodles separate. Then add the eggs carefully so they don't separate. Cook for another 5 minutes or until egg whites have solidified.
  • 3. Transfer to soup bowl and garnish with scallion slices and gim strips.
  • *Most instant udon noodles and ramen varieties can be found in the Asian foods section of larger chain grocery stores. If not available, they will be available at your local Asian grocers.
