Ingredients

  • 1 1/2 lb. peeled and deveined shrimp
  • 2 boiled eggs
  • 1 stalk celery
  • 1/4 c. sweet relish
  • 1 small bunch shallots
  • 1/2 c. mayonnaise
  • 1 Tbsp. yellow mustard
  • salt and pepper to taste

Method

  • Boil shrimp until they turn pink.
  • Drain and set aside.
  • In food processor, blend celery and shallots together until they are a smooth consistency.
  • Remove celery mixture from processor. Combine shrimp, eggs and sweet relish in processor for 15 seconds. Add this mixture to celery mixture.
  • Add mayonnaise, mustard, salt and pepper.
  • Combine well and spread over your favorite bread.
