Ingredients
- 1 1/2 lb. peeled and deveined shrimp
- 2 boiled eggs
- 1 stalk celery
- 1/4 c. sweet relish
- 1 small bunch shallots
- 1/2 c. mayonnaise
- 1 Tbsp. yellow mustard
- salt and pepper to taste
Method
- Boil shrimp until they turn pink.
- Drain and set aside.
- In food processor, blend celery and shallots together until they are a smooth consistency.
- Remove celery mixture from processor. Combine shrimp, eggs and sweet relish in processor for 15 seconds. Add this mixture to celery mixture.
- Add mayonnaise, mustard, salt and pepper.
- Combine well and spread over your favorite bread.
