Ingredients

  • 1 lb. fresh or frozen shelled shrimp
  • 1 (9 oz.) pkg. frozen artichoke hearts
  • 5 tsp. cornstarch
  • 1/2 tsp. paprika
  • 1 2/3 c. milk
  • 1/4 c. dry white wine
  • 3/4 c. shredded Swiss cheese
  • 2 1/4 c. cooked rice
  • 1/8 tsp. dried oregano, crushed
  • paprika
  • 3 Tbsp. fine dry bread crumbs
  • 1 Tbsp. butter, melted

Method

  • Thaw shrimp, if frozen.
  • Cook artichokes according to package directions; drain.
  • Set aside.
  • For cheese sauce, in medium saucepan combine cornstarch, 1/2 tsp. paprika, 1/2 tsp. salt, and dash pepper.
  • Add milk all at once.
  • Cook and stir until thickened and bubbly.
  • Stir in wine; heat through.
  • Stir Swiss cheese into sauce till melted.
  • Set aside.
