- 1 lb. fresh or frozen shelled shrimp
- 1 (9 oz.) pkg. frozen artichoke hearts
- 5 tsp. cornstarch
- 1/2 tsp. paprika
- 1 2/3 c. milk
- 1/4 c. dry white wine
- 3/4 c. shredded Swiss cheese
- 2 1/4 c. cooked rice
- 1/8 tsp. dried oregano, crushed
- paprika
- 3 Tbsp. fine dry bread crumbs
- 1 Tbsp. butter, melted
Method
- Thaw shrimp, if frozen.
- Cook artichokes according to package directions; drain.
- Set aside.
- For cheese sauce, in medium saucepan combine cornstarch, 1/2 tsp. paprika, 1/2 tsp. salt, and dash pepper.
- Add milk all at once.
- Cook and stir until thickened and bubbly.
- Stir in wine; heat through.
- Stir Swiss cheese into sauce till melted.
- Set aside.
