Ingredients
- 3 large onions, sliced
- 4 Tbsp. butter
- 2 Tbsp. flour
- 7 1/2 c. beef broth
- salt
- pepper
- slices of French bread
- grated Gruyere, Monterey Jack or Muenster cheese
Method
- Fry onions in butter only until golden and transparent.
- Stir in flour and let it cook for 2 minutes.
- Add salt and freshly ground pepper and pour in broth, stirring well.
- Simmer gently for 15 minutes.
- Fry slices of French bread in butter (usually one or two per person), place them in an ovenproof soup tureen or individual soup bowls and pour onions and broth over.
- Sprinkle with thick layer of cheese.
- Place in 350° oven until cheese has melted and serve immediately.
