Ingredients

  • 3 large onions, sliced
  • 4 Tbsp. butter
  • 2 Tbsp. flour
  • 7 1/2 c. beef broth
  • salt
  • pepper
  • slices of French bread
  • grated Gruyere, Monterey Jack or Muenster cheese

Method

  • Fry onions in butter only until golden and transparent.
  • Stir in flour and let it cook for 2 minutes.
  • Add salt and freshly ground pepper and pour in broth, stirring well.
  • Simmer gently for 15 minutes.
  • Fry slices of French bread in butter (usually one or two per person), place them in an ovenproof soup tureen or individual soup bowls and pour onions and broth over.
  • Sprinkle with thick layer of cheese.
  • Place in 350° oven until cheese has melted and serve immediately.
