Ingredients

  • 2 Tbsp. oil
  • 2 Tbsp. flour
  • 1 medium white onion, chopped
  • 1/2 c. celery, chopped
  • 1/2 c. bell pepper, chopped
  • 1 lb. clean deveined shrimp
  • 1/2 c. green onions, cut up
  • 1 Tbsp. parsley flakes

Method

  • On medium heat, place oil and flour in black skillet and stir until brown.
  • Add onion, celery and bell pepper.
  • Reduce heat. Simmer 15 minutes.
  • Add shrimp, parsley, green onions, salt and pepper.
  • Bring to a boil, then reduce heat and simmer 15 minutes. Add cooked rice and mix well.
  • Place lid on pot until ready to serve.
  • Serves about 6.
