Ingredients

  • 1 stick butter
  • 5 large onions, sliced
  • 2 Tbsp. plain flour
  • 8 c. chicken broth
  • 1 c. shredded Swiss cheese
  • 12 (1/2-inch) slices Italian bread
  • 12 slices Swiss cheese

Method

  • Melt butter; add onions and cook 30 minutes or until golden on medium.
  • Stir in flour.
  • Gradually stir in chicken broth.
  • Bring to boil; reduce heat and simmer for 5 minutes.
  • Preheat broiler. Pour soup in 6 ovenproof bowls.
  • Place on baking sheet.
  • Add 2 tablespoons shredded cheese, 2 slices bread and 2 slices cheese to each bowl.
  • Place under broiler for 3 minutes or until cheese is golden and bubbly.
