Ingredients

  • 2 Tbsp. oil
  • 2 Tbsp. flour
  • 1 c. chopped onion
  • 1/3 c. each chopped green onion and shallots
  • 2 cloves garlic, minced
  • 1 (1 lb. 12 oz.) can tomatoes
  • 2 (10 oz.) pkg. frozen cut okra
  • 1 small lemon, sliced
  • 2 bay leaves
  • 1/2 tsp. salt
  • 1/2 tsp. Tabasco sauce
  • 2 lb. shrimp

Method

  • Heat oil in large skillet; blend in flour.
  • Cook over low heat until dark brown, stirring constantly.
  • Add all ingredients, except shrimp; mix well.
  • Bring to boil; reduce heat.
  • Simmer for 35 to 40 minutes.
  • Stir in shrimp.
  • Cook for 10 minutes longer.
  • Serve over rice.
