Ingredients

  • 1/2 cup mayonnaise
  • 1 tsp Dijon mustard
  • 1 tbsp fresh dill, finely chopped, plus extra, to serve
  • 2 heads baby romaine lettuce, trimmed, torn
  • 2 None small ripe avocados, cut into small wedges
  • 1 None medium mango, peeled, pitted, thinly sliced
  • 18 None cooked shrimp, peeled, deveined, tails intact
  • 2 tsp baby capers, drained

Method

  • For the dill dressing, combine mayonnaise, mustard, dill and 1 tbsp cold water. Season.
  • Distribute lettuce, avocados and mango between serving glasses. Top with shrimp and dressing. Sprinkle with capers and extra dill sprigs. Serve.
