Ingredients
- 1/2 cup mayonnaise
- 1 tsp Dijon mustard
- 1 tbsp fresh dill, finely chopped, plus extra, to serve
- 2 heads baby romaine lettuce, trimmed, torn
- 2 None small ripe avocados, cut into small wedges
- 1 None medium mango, peeled, pitted, thinly sliced
- 18 None cooked shrimp, peeled, deveined, tails intact
- 2 tsp baby capers, drained
Method
- For the dill dressing, combine mayonnaise, mustard, dill and 1 tbsp cold water. Season.
- Distribute lettuce, avocados and mango between serving glasses. Top with shrimp and dressing. Sprinkle with capers and extra dill sprigs. Serve.
