Ingredients

  • 1/2 red onion
  • 3 cup medium shrimp
  • 2 limes juiced
  • 1 chili pepper
  • 1/2 cup cilantro leaves
  • 3 large avacados
  • 1 cup fresh pineapple chopped
  • 1 dash salt
  • 1 dash pepper

Method

  • slice onion very thin
  • place onion in bowl of cold salted water
  • cook shrimp for 1or 2 minutes drain and rinse with cold water
  • finely mince pepper removing seeds and veins
  • place chili and shrimp in bowl with lime juice
  • cut one avacado and pineapple into bite size pieces
  • drain and rinse onions and toss all ingredients
  • chill for 15 minutes
