Ingredients
- 1/2 red onion
- 3 cup medium shrimp
- 2 limes juiced
- 1 chili pepper
- 1/2 cup cilantro leaves
- 3 large avacados
- 1 cup fresh pineapple chopped
- 1 dash salt
- 1 dash pepper
Method
- slice onion very thin
- place onion in bowl of cold salted water
- cook shrimp for 1or 2 minutes drain and rinse with cold water
- finely mince pepper removing seeds and veins
- place chili and shrimp in bowl with lime juice
- cut one avacado and pineapple into bite size pieces
- drain and rinse onions and toss all ingredients
- chill for 15 minutes
