Ingredients

  • 1 medium chopped green pepper
  • 3/4 c. melted butter
  • 1 can chicken broth
  • 1 can Ro-Tel tomatoes
  • 2 c. uncooked rice
  • 1 medium onion, chopped
  • 2 lb. boiled, peeled shrimp
  • 1 can cream of chicken soup
  • 2 c. Velveeta cheese

Method

  • Saute pepper and onion in butter until tender.
  • Boil shrimp and peel.
  • Cook rice until tender.
  • Mix all ingredients together and simmer until cheese is melted.
  • Pout in 3-quart casserole and bake 15 minutes.
  • I use water if I don't have chicken broth. Also, you can use Cheddar cheese instead of Velveeta.
