- 1 medium chopped green pepper
- 3/4 c. melted butter
- 1 can chicken broth
- 1 can Ro-Tel tomatoes
- 2 c. uncooked rice
- 1 medium onion, chopped
- 2 lb. boiled, peeled shrimp
- 1 can cream of chicken soup
- 2 c. Velveeta cheese
Method
- Saute pepper and onion in butter until tender.
- Boil shrimp and peel.
- Cook rice until tender.
- Mix all ingredients together and simmer until cheese is melted.
- Pout in 3-quart casserole and bake 15 minutes.
- I use water if I don't have chicken broth. Also, you can use Cheddar cheese instead of Velveeta.
