Ingredients
- 1 lb. raw shrimp
- 1/2 tsp. salt
- 1/2 tsp. minced garlic
- 4 Tbsp. butter
- 1 onion, minced
- 1 rib celery, minced
- 1/2 carrot, grated
- 2 Tbsp. flour
- 1/2 tsp. dry mustard
- 1 qt. light cream or half and half
- 1/4 tsp. pepper
- dry sherry
- chopped parsley
Method
- Boil shrimp with garlic and salt in 3 cups of water for 4 to 5 minutes; drain, reserving liquid.
- Shell and devein shrimp. Return shells to reserved cooking liquid and boil down until liquid measures 1 1/2 cups.
- Strain and reserve broth.
