Ingredients

  • 1 lb. raw shrimp
  • 1/2 tsp. salt
  • 1/2 tsp. minced garlic
  • 4 Tbsp. butter
  • 1 onion, minced
  • 1 rib celery, minced
  • 1/2 carrot, grated
  • 2 Tbsp. flour
  • 1/2 tsp. dry mustard
  • 1 qt. light cream or half and half
  • 1/4 tsp. pepper
  • dry sherry
  • chopped parsley

Method

  • Boil shrimp with garlic and salt in 3 cups of water for 4 to 5 minutes; drain, reserving liquid.
  • Shell and devein shrimp. Return shells to reserved cooking liquid and boil down until liquid measures 1 1/2 cups.
  • Strain and reserve broth.
