Ingredients
- 1 large (1 lb.) ripe papaya
- 1 Tbsp. chopped fresh cilantro (coriander)
- 24 (3/4 lb. total) peeled, cooked large shrimp
- 1/4 c. lime juice
- 2 tsp. fish sauce (nam pla or nuoc mam) or soy sauce
- 2 tsp. sugar
- 1/4 tsp. crushed dried hot red chilies
Method
- Peel and seed the papaya. Cut into 3/4-inch chunks.
- Mix with the cilantro and mound on a platter.
- Beside it, arrange the shrimp.
- In a bowl, stir the lime juice and fish sauce or soy sauce, sugar and dried red hot chilies.
- Spear fruit and shrimp with tiny forks to dip into sauce.
- Serves 12.
