Ingredients

  • 1 large (1 lb.) ripe papaya
  • 1 Tbsp. chopped fresh cilantro (coriander)
  • 24 (3/4 lb. total) peeled, cooked large shrimp
  • 1/4 c. lime juice
  • 2 tsp. fish sauce (nam pla or nuoc mam) or soy sauce
  • 2 tsp. sugar
  • 1/4 tsp. crushed dried hot red chilies

Method

  • Peel and seed the papaya. Cut into 3/4-inch chunks.
  • Mix with the cilantro and mound on a platter.
  • Beside it, arrange the shrimp.
  • In a bowl, stir the lime juice and fish sauce or soy sauce, sugar and dried red hot chilies.
  • Spear fruit and shrimp with tiny forks to dip into sauce.
  • Serves 12.
