Ingredients
- 2 avocados ripe, peeled, pit removed and cut into cubes
- 2 tablespoons lemon juice
- 1/2 cup margarine
- 8 slices bread
- 1/2 pound shrimp
- 1/8 pound lettuce roughly chopped
- 1/4 pound radish sliced
Method
- Mix avocados with lemon juice and margarine, mash with a fork and season with salt and pepper.
- Toast the bread until golden brown. Spread the avocado over 4 slices, top with shrimp, lettuce and radishes. Cover with the remaining slice of toast, cut in half and serve.
