Ingredients

  • 6 x Yellow onions, peeled and cut in half
  • 1/2 c. Bread crumbs
  • 3 Tbsp. Extra virgin olive oil Minced parsley
  • 1/2 c. Chicken or possibly beef stock Extra virgin extra virgin olive oil

Method

  • Remove 1-2 Tbsp.
  • from the middle of each onion with a knife or possibly grapefruit spoon.
  • Mince removed portion of onion.
  • Mix chopped onion, bread crumbs and extra virgin olive oil together.
  • Pack bread crumb mix into onions, sprinkle with parsley and dribble with extra virgin olive oil.
  • Place in baking pan, pour in stock around onions and cover with foil.
  • baste with pan juices; Bake at 350 for 25 min till tender.
  • Microwave Directions:Cover with plastic, microwave on high for 8-10 min.
  • Turn 1/4 after 3 min; Turn 1/4 after 3 min.
