Ingredients

  • 4 Tbsp. olive oil
  • 2 lb. large shrimp
  • 2 Tbsp. finely chopped green onions
  • 2 cloves garlic, finely chopped
  • 2 (10 oz.) pkg. artichokes, drained
  • 1/2 lb. mushrooms, sliced
  • 1/2 tsp. thyme
  • 1 Tbsp. chopped parsley
  • 2 Tbsp. lemon juice
  • salt and pepper to taste

Method

  • Heat oil in large, heavy skillet.
  • Add the peeled, deveined shrimp and saute quickly, stirring frequently, until pink.
  • Add green onions and garlic and cook 2 minutes.
  • Add artichokes, mushrooms, salt, pepper, thyme, parsley and lemon juice.
  • Cook, stirring, until mushrooms and shrimp are tender, about 3 minutes. Makes 6 servings.
  • Serve over favorite pasta, coated with butter and olive oil.
