Ingredients
- 4 Tbsp. olive oil
- 2 lb. large shrimp
- 2 Tbsp. finely chopped green onions
- 2 cloves garlic, finely chopped
- 2 (10 oz.) pkg. artichokes, drained
- 1/2 lb. mushrooms, sliced
- 1/2 tsp. thyme
- 1 Tbsp. chopped parsley
- 2 Tbsp. lemon juice
- salt and pepper to taste
Method
- Heat oil in large, heavy skillet.
- Add the peeled, deveined shrimp and saute quickly, stirring frequently, until pink.
- Add green onions and garlic and cook 2 minutes.
- Add artichokes, mushrooms, salt, pepper, thyme, parsley and lemon juice.
- Cook, stirring, until mushrooms and shrimp are tender, about 3 minutes. Makes 6 servings.
- Serve over favorite pasta, coated with butter and olive oil.
