Ingredients

  • 2 12 cups graham cracker crumbs
  • 12 cup butter, softened
  • 14 cup sugar
  • 3 (8 ounce) containers cream cheese
  • 34 cup sugar
  • 2 eggs
  • 2 teaspoons vanilla
  • 12 cup sliced strawberry
  • 12 cup raspberries
  • 12 cup blueberries
  • 1 cup sliced peach
  • 34 cup sugar
  • 12 cup water
  • 1 teaspoon cornstarch

Method

  • Combine crumbs and 1/2 cup sugar.
  • Cut in butter.
  • Press into bottom of 8x8in baking dish.
  • Mix cream cheese and 3/4 cup sugar until blended.
  • Add eggs and vanilla; mix well.
  • Pour over crust.
  • Bake at 325* for 1 hour or until set.
  • Cool.
  • Combine fruit in a bowl.
  • In small saucepan, mix sugar, water, and cornstarch.
  • Cook and stir until mixture comes to a boil.
  • Add to fruit and mix gently.
  • Spread on cooled cheesecake.
