Ingredients
- 6 medium size sweet potatoes
- 1 tsp. salt
- water
- 1/4 c. butter
- 1/4 c. brown sugar
- 4 Tbsp. creamed sherry
- 1/8 tsp. pepper
Method
- In 4-quart saucepan over high heat, heat sweet potatoes, salt and water (enough to cover the potatoes).
- Bring to a boil. Reduce heat to low; cover and simmer 30 to 40 minutes, until tender.
- Drain and peel potatoes.
- Mix the sweet potatoes and butter on low speed.
- Add remaining ingredients and mix on medium speed until light and fluffy.
