Ingredients

  • 6 medium size sweet potatoes
  • 1 tsp. salt
  • water
  • 1/4 c. butter
  • 1/4 c. brown sugar
  • 4 Tbsp. creamed sherry
  • 1/8 tsp. pepper

Method

  • In 4-quart saucepan over high heat, heat sweet potatoes, salt and water (enough to cover the potatoes).
  • Bring to a boil. Reduce heat to low; cover and simmer 30 to 40 minutes, until tender.
  • Drain and peel potatoes.
  • Mix the sweet potatoes and butter on low speed.
  • Add remaining ingredients and mix on medium speed until light and fluffy.
