- 1 kg floury potatoes, peeled and chopped
- 1 tbsp olive oil
- 600 g minced lamb
- 3 medium onions, finely diced
- 3 cloves garlic, finely chopped
- 1 tsp chilli powder
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1 tsp dried oregano
- 1 tsp ground cumin
- 125 ml semi-skimmed milk
- 2 tbsp butter
- 1 pinch nutmeg
- None None fresh rosemary and thyme for garnish
Method
- Preheat oven to 400°F. Cook the potatoes in boiling salted water for about 20 minutes.
- Meanwhile, heat oil in a pan and cook the ground lamb for about 5 minutes until browned then add the onion and garlic and cook for a few more minutes. Add the chili powder, thyme, rosemary, oregano, and cumin and season to taste with salt and pepper.
- Drain the potatoes and mash, with the milk and butter, until smooth. Stir in the nutmeg and season to taste with salt and pepper. Transfer the meat to a roasting pan, top with the mashed potato and bake for about 20 minutes, until golden brown. Serve with a garnish of rosemary and thyme.
