Ingredients

  • 1 lb ground lamb or diced lamb
  • 1 tbsp olive oil
  • 1 None onion, diced
  • 1/4 cup tomato sauce
  • 1/2 cup beef or vegetable stock
  • 1 tbsp chopped fresh parsley
  • None None Salt and cracked black pepper
  • 2 large potatoes, peeled and coarsely chopped
  • 1 tbsp butter
  • 1/4 cup milk

Method

  • Preheat the oven to 350°F.
  • Heat oil in a large skillet on medium heat. Add lamb and onion and cook 10 mins, stirring, until browned. Add tomato sauce, stock, parsley, salt and pepper. Stir to combine. Spoon into individual baking dishes.
  • Meanwhile, bring a large saucepan of water to a boil. Add potatoes. Boil 10 mins, or until tender. Drain potatoes. Mash with butter and milk. Spoon over lamb mixture in baking dishes.
  • Bake 20 mins, until top is browned. Serve immediately.
