Ingredients

  • 10 medium potatoes
  • 1 yellow onion
  • 1 red pepper
  • 1 lb. lean ground beef
  • 3 Tbsp. butter
  • 1 clove garlic
  • 2 tsp. vinegar
  • 3 Tbsp. chopped parsley
  • 1 bay leaf
  • dash of paprika
  • dash of grated nutmeg
  • 3 Tbsp. half and half
  • 5 to 6 c. grated Cheddar cheese

Method

  • Peel, then cut potatoes into wedges.
  • Cook until tender in unsalted water.
  • Chop onion.
  • Cut red pepper into strips.
  • Saute ground beef in 1 tablespoon butter until it loses its pinkness. Add onion, pepper, garlic and salt and pepper to taste.
  • Add vinegar, parsley and bay leaf.
  • Cook for a few minutes.
  • Transfer to lightly greased baking dish.
