Ingredients

  • 2 unbeaten egg whites
  • 1 1/2 c. sugar
  • 5 Tbsp. cold water
  • 1/4 tsp. cream of tartar or 1 1/2 tsp. light corn syrup
  • 1 tsp. vanilla

Method

  • Place egg whites, sugar, water and corn syrup or cream of tartar in the top of a double boiler and beat until thoroughly blended.
  • Place these ingredients over rapidly boiling water.
  • Beat them constantly with a rotary beater or wire whisk for 7 minutes. Remove icing from heat, add 1 teaspoon vanilla.
  • Continue beating until icing is the right consistency to spread.
  • You may add 1/2 cup chopped nuts, coconut or crushed peppermint candy.
