- 1 (15 oz.) can black beans, drained and rinsed
- 2 to 3 tsp. chopped fresh cilantro
- 1 tsp. chili powder
- 1 small avocado
- 2 tsp. chopped jalapeno peppers
- 1 medium tomato, seeded and finely chopped
- 1/2 c. shredded nonfat or reduced-fat Monterey Jack cheese
- 1/4 c. thinly sliced scallions
- 1/4 c. chopped black olives
Method
- Place the beans, cilantro and chili powder in a food processor and process until smooth.
- Spread the mixture in a 9-inch deep dish pie pan or a shallow serving dish.
- Peel and finely chop the avocado.
- Toss with the lemon juice and set aside.
