Ingredients

  • 250 g rice noodles
  • 5 tbsp sesame seeds, toasted
  • 1 None cucumber, peeled, deseeded, and sliced
  • 2 None red chillies, deseeded, and finely sliced
  • 1 None lime, zested and juiced
  • 7-8 tbsp canola oil
  • 1-2 tsp brown sugar
  • 1 clove garlic, peeled and finely sliced
  • 3-4 tbsp soy sauce
  • 2 tbsp plain yogurt
  • 1/4 bunch coriander, coarsely chopped
  • 500 g beef brisket, thinly sliced

Method

  • Cook noodles in boiling salted water according to directions on package. Drain noodles, rinse with cold water, and set aside in a mixing bowl.
  • Heat 2 tbsp oil in a frying pan and saute chilies and cucumber for 1 min, then add to noodles. Combine 2-3 tbsp oil, 1 tsp brown sugar, the lime juice and zest. Season, and pour over noodles.
  • In a food processor blend 4 tbsp sesame seeds, the garlic, 2 tbsp oil, the soy sauce and 2-3 tbsp of water to make a thick paste. Stir in yogurt and remaining sesame seeds.
  • Heat 1 tbsp oil in a frying pan and sear beef for 3-4 mins. Remove from heat, stir in sesame paste. Arrange the noodles on plates, top with the sesame beef and garnish with cilantro.
