Ingredients

  • 1 pinch coarse sea salt
  • 1 12 lbs flank steaks
  • 2 tablespoons extra virgin olive oil, to taste
  • 2 tablespoons balsamic vinegar, to taste

Method

  • Put a cast iron skillet on high heat.
  • Sprinkle coarse sea salt in the skillet.
  • Let the skillet heat up until the salt starts popping.
  • Put in the flank steak and sear for about 2 minutes, until it does not stick to the skillet anymore.
  • Turn over and sear for another 2 minutes.
  • Then, flip the steak every minute or so and continue searing until desired doneness is reached.
  • Remove steak from skillet, cover with a piece of aluminum foil, and let stand for 5 minutes.
  • Cut steak in strips or bite size pieces and season with salt, olive oil and a dash of balsamic vinegar.
  • Serve.
