Ingredients

  • olive oil
  • 2 cans Del Monte chunky tomatoes (pasta style)
  • fresh seafood, diced (various types, approximately 1 1/2 lb. total)
  • dash of salt and pepper
  • 1/2 c. white wine
  • rice

Method

  • Pour olive oil in pan, enough to cover the bottom.
  • Throw in diced seafood (any type can be used, for example, diced tuna, swordfish, scallops) and cook approximately 3 minutes.
  • Add tomatoes, salt and pepper and white wine.
  • Simmer.
  • Serve over rice.
