Ingredients
- olive oil
- 2 cans Del Monte chunky tomatoes (pasta style)
- fresh seafood, diced (various types, approximately 1 1/2 lb. total)
- dash of salt and pepper
- 1/2 c. white wine
- rice
Method
- Pour olive oil in pan, enough to cover the bottom.
- Throw in diced seafood (any type can be used, for example, diced tuna, swordfish, scallops) and cook approximately 3 minutes.
- Add tomatoes, salt and pepper and white wine.
- Simmer.
- Serve over rice.
