Ingredients
- 1 can condensed green pea soup
- 1 can condensed tomato soup
- 1 c. light cream
- 1 lb. crab meat (frozen or fresh) or 1 lb. cooked, shelled and deveined shrimp, cut in quarters
- 1 Tbsp. brown sugar
- 2 Tbsp. rum
- 2 Tbsp. chopped chives (for garnish)
Method
- Combine pea and tomato soups with cream in saucepan; heat 15 minutes, stirring often.
- (Do not boil.)
- Add crab meat or shrimp; simmer 10 minutes.
- (Do not boil.)
- Remove from heat; stir in brown sugar and rum.
- Serve in consomme cups; garnish with chives.
