Ingredients

  • 1 can condensed green pea soup
  • 1 can condensed tomato soup
  • 1 c. light cream
  • 1 lb. crab meat (frozen or fresh) or 1 lb. cooked, shelled and deveined shrimp, cut in quarters
  • 1 Tbsp. brown sugar
  • 2 Tbsp. rum
  • 2 Tbsp. chopped chives (for garnish)

Method

  • Combine pea and tomato soups with cream in saucepan; heat 15 minutes, stirring often.
  • (Do not boil.)
  • Add crab meat or shrimp; simmer 10 minutes.
  • (Do not boil.)
  • Remove from heat; stir in brown sugar and rum.
  • Serve in consomme cups; garnish with chives.
